A few walnuts
Juice of half a lemon
1 tsp white balsamic vinegar
Salt and pepper
Wash and dry the arugula.
Cut the apple in thin slices.
Cut the dattes in very small pieces.
Crush the walnuts.
Add all these ingredients to a bowl and add the beansprouts.
Make the dressing by mixing the lemon juice, the vinegar and the salt/pepper.
Add olive oil while whisking until the dressing is balanced (taste!).
Add the dressing to the salad and serve!
