• 1 red cabbage

  • 1 tbsp caraway or cumin seeds

  • 1 tbsp thyme or other dried herbs

  • 1 tbsp salt or bouillon powder

  • water

  • Croutons (optional):

  • A few slices of old bread

  • Olive oil

  • Garlic powder

  • Salt and pepper

Preparation :
Cut the cabbage in large slices
Put olive oil in a pot and let the seeds cook for a few seconds
Add the cabbage and cover with water
Boil it water with either salt or bouillon powder
Add the thyme, blend it into a soup
Adjust the seasoning

For the croutons :
Cut the bread in small squares
Add a few tablespoons of
Once they are cooked (they should be crispy), season them
Put them on the soup right before serving

Note : You can also steam the cabbage instead of boiling it. In that case, add it in a pot with the spices and water once cooked, mix with the spices and blend.

What are caraway seeds ?
Caraway is a spice whose flavors ressemble cumin and fennel seeds (it is sometimes called the ‘dutch cumin’!). It is commonly used in dishes that contain cabbage, such as sauerkraut.
