Orange and raisins scones

Ingredients

  • Scones:

  • 250g flour

  • 8g baking powder (two small teaspoons)

  • 1tsp cinammon

  • 30g coarsly crush walnuts

  • A pinch of salt

  • 250ml Soy milk

  • 1 tea bag

  • 40g oil

  • 30gr rice syrup

  • 40g raisins

  • Filling:

  • 100g Soy whip cream

  • Orange marmelade

For approximately 10 scones (4 servings):

Preparation:

  • Preheat the oven at 180 ° C
  • Put boiling water and tea in a bowl, add the raisins
  • Mix all the dry ingredients in a large bowl
  • Add the milk and oil and mix again
  • Grate the orange for the zest
  • Strain the raisins (you can drink the tea!) and mix them with the rice syrup and the orange zest
  • Add these ingredients to the dough and mix everything together
  • Divide the dough in 10 portions
  • Put the portions of dough on a oven tray with a baking sheet
  • Mix the soy milk and rice syrup and brush this mix on the scones
  • Bake for 15 minutes
  • Wait a few minutes to let them cool down

Filling:

  • Mix the soy whip cream until it becomes fluffy
  • When the scones have cooled down, cut them in half
  • Fill them with marmelade and soy whipped cream
