Hasselback potatoes

  • 8 medium sized potatoes

  • 3-4 tbsp olive oil

  • 1 garlic clove

  • Fresh (or dry) rosemary

  • Fresh (or dry) thyme

  • Coarse sea salt

  • Chili flakes (optional)

  • 1 tsp lemon zest (optional)

1. Set the oven to 200°C
2. Make cuts in the potato a few millimetre apart leaving the bottom intact so that it holds the entire potato together. Open the potatotoes as much as possible.
3.Mix together the olive oil, herbs and spices. Brush the tops and bottoms of each potato with the mixture.
4. Bake for about 20-30 minutes, depending on the size of your potatoes. Check midway on the potatoes and if necessary try to separate the slices a little bit so they roast more evenly.
