Chana Masala and Bhajis

Ingredients

  • Chana masala:

  • 1 onion

  • 3 cloves of chopped garlic

  • 1 teaspoon of chopped ginger

  • 1 tbsp of cumin seeds

  • 2 chopped tomatoes

  • 1 tsp chili powder

  • 1 tsp coriander powder

  • 1,5 tsp turmeric

  • 1 can of chickpeas

  • Salt and pepper (to taste)

  • Bhajis:

  • 1 onion

  • 1 carrot

  • Chickpea brine/ aquafaba (liquid from the can)

  • 1/2 cup chickpea flour

  • 3 tbsp arrowroot

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • 1/2 tsp curcuma

  • 1/4 tsp garlic powder

  • Handful parsley

  • Salt and pepper

  • Rice


Instructions Chana Masala:

  1. Rinse the chickpeas. Keep the liquide! This is called Aquafaba..
  2. On a pan, add 1-2 tablespoons of oil. Chop the onion into small pieces and let it saute for a while.
  3. Add all other ingredients except for the chickpeas (and the liquid).
  4. Mix and wait until it turns fragrant and golden brown in colour.
  5. Add the chickpeas to the pan let it simmer for around 10 mins.

    Instructions bhajis:

 

  1. Whip the liquide of chickpea’s (aquafaba) with a hand whipper.
  2. Chop the carrot and the onion in julienne.
  3. Mix with Aquafaba and the rest of the ingredients.
  4. The batter should resemble a thick pancake batter, add flour and arrowroot if needed.
  5. Take 1 full spoon of this mix and deep fry thin in hot oil.
